“The onion of the countryside”, is the nut from a West African (Cameroon, Gabon & Ghana) rain forest tree and
not related to onion at all.

It has a smokey undertone and a very strong garlic flavour.
In Cameroon its fruits /slices, as well as its bark /Olum, are used in dishes such as “Yellow sauce”, “Mbongo”, “Nkui”, yellow sauce, nkwem without salt, pepper soup ect.

Method:
Add a bottle of dry red wine in a pot.
Add whole tube of spices and heat.
Just before boiling, add 2 tubes of sugar and still.
Simmer for 30min. (Don't let your wine boil)

Well done everyone for completing "Spice Blending Module 1- Curry Base".
It was a pleasure meeting you, we will hopefully see each other again at our next Module next month.

We started off with some coffee and *Theory* and asked the questions: What is the difference between Curry & Masala? When do I add the spices? How do we prepare the spices?

Then came the *fun stuff* 😉 Roasting, Scooping, Grinding, Blending... and off course expanding our "mental library" of flavours and aromas!

And lastly we finished off with a light brunch and hand blended herbal tea.
